Hi SNACC Community! Today we will be posting an easy recipe for strawberry & banana ice cream on our Instagram page; click this link to check it out! Since strawberries are a major ingredient in this week's summer snack recipe, we wanted to provide you with some more information about this delicious fruit!
Strawberries are incredibly sweet and flavorful, and ice cream is the perfect summer snack! Using both of these fabulous foods we decided to share an easy way to make strawberry & banana ice cream! Summer is all about those refreshing snacks that are perfect for a hot day, so why not try one that is so easy to make and also super healthy!
If you haven't tried the strawberry & banana ice cream yet, this snack is super tasty and requires only two ingredients: 4 bananas and 9 ounces of strawberries. See the directions below:
Remove the leaves from the strawberries, then chop them into halves (you may chop them into quarters if you are using large strawberries.).
Chop the bananas into 5-6 pieces.
Place the fruit into a freezer ziploc bag and remove all the air.
Freeze the fruit in the ziploc bag for at least 6 hours.
Place the frozen fruit into a food processor until it has the consistency of a smoothie.
Pour the mixture into a tin loaf, cover with cling wrap, and freeze for an hour.
Remove the tin from the freezer and serve in a cup or a cone with toppings of your choice!

To make the salad, you will need:
8 oz of mixed greens
1 cup of sliced strawberries
½ cup of blueberries
½ cup of mandarin oranges
½ cup of pecans
2 tbsp of sliced green onion
3.5 oz of crumbled goat cheese
To make the dressing, you will need:
½ cup of sparkling orange juice
3 tbsp of olive oil
2 tbsp of white balsamic vinegar
½ tbsp of honey
½ tsp of salt
¼ tsp of pepper
Combine the salad ingredients into a large bowl
Combine dressing ingredients into a small jar/container and shake well
Pour over salad right before serving
