Ingredients

•2 lb boneless skinless chicken thighs

•1 scallion

•½ yellow onion

•1⁄4 cup red pepper

•1 tablespoon jerk seasoning

•1 tablespoons fresh thyme

•1 tablespoon browning seasoning

•½ tablespoon of minced garlic

•Salt and pepper to taste

•Olive oil

Preparation

  1. Slice chicken into three or four thinner pieces and then slice each piece again in half

  2. Slice half of the onion

  3. Chop scallion and julienne the pepper

  4. Place chicken in large bowl with all of the cut vegetables and then add all dry seasoning into the bowl

  5. Add browning seasoning to the mixture of chicken and vegetables

  6. Add minced garlic and fresh thyme

  7. Heat olive oil in a large skillet over medium heat

  8. Cook until chicken is browned on the outside and fully cooked through on the inside

  9. Serve over a bed of rice with a side of sautéed green beans

  10. Enjoy!
