Jamaican Chicken Stew

About the Recipe


  • 4-6 chicken drumsticks

  • 1/2 onion

  • 1 Bell pepper

  • 1 scallion

  • thyme

  • salt/papper

  • All purpose seasoning

  • Olive Oil

  • Ketchup

  • Browning Sauce

  • 1 Idaho Potato 

  • 1 Carrot

  • White Rice


  1. Rinse and dry chicken

  2. Season chicken with salt, all purpose seasoning, black pepper, paprika, garlic powder. Rub the seasonings into the chicken

  3. Wash hands

  4. Turn pan to medium heat

  5. Put enough olive oil in pan to coat bottom of the pot

  6. Dice onion, peppers, mince your garlic, and put that to the side. Throw in your thyme as well.

  7. Cut up 3 scallions

  8. Put chicken in pan, let it sear, don’t move it!

  9. Boil water for rice - 2:1 ratio

  10. Peel + cut potatoes

  11. Turn chicken to brown it on all sides

  12. Remove chicken from put, and put bowl of veggies and herbs into same pan

  13. Peel + cut the carrots

  14. Put chicken back in pot and add browning

  15. Add ketchup and browning sauce

  16. Add potatoes and carrots

  17. Add water

  18. Let it come to a boil, and cover

  19. Let it cook for 7-10 minutes or until cooked through w

  20. Plate, and enjoy!
